This is a quick lunch dish that I created using leftover pulled chicken. Read my article on how I stretch $20 of organic chicken out for an entire month. I even made the bread that the sandwich is on (which I am not expecting you to do, but I will link that recipe as well if you feel so inclined).
2 slices of bread (homemade or storebought)
a handful of leftover pulled chicken
a little bit of lettuce
a few sprigs of cilantro
1/2 avocado, cut into chunks
1 teaspoon of lime juice
1/2 teaspoon mayo
dash of garlic powder
dash of paprika
salt and pepper to taste
In a small bowl, mash the avocado with lime juice, mayo, and seasonings. Toast your bread. Spread however much you want on one slice of bread. Add the chicken, lettuce, and cilantro. Top with the other slice of bread (obviously) and scarf it down.
